The Story Behind The Lemon Meringue Sour

Dessert doesn't have to come on a plate. The Lemon Meringue Sour cocktail has all of the sweet, fluffy, and tart flavors of homemade lemon meringue pie, but with the addition of tequila. Bright lemon-infused tequila (or tequila mixed with a little lemon juice if you don't want to spend the time infusing your own liquor) is balanced out by the somewhat neutral coconut milk, and a splash of rosé simple syrup sweetens the drink up. A strong shake creates a creamy foam on top of the drink from the pineapple.

Unlike cloyingly sweet dessert cocktails loaded with ice cream and sugar, the Lemon Meringue Sour is balanced and refreshing. In short, it's the type of drink that'll make you reevaluate your dessert choices.

Ingredients

  • 2 ounces lemon-infused tequila
  • 1.5 ounces fresh pineapple juice
  • 1.5 ounces coconut milk
  • .75 ounce rosé simple syrup (one part rosé, one part sugar)
  • 2 dashes citrus bitters

Directions

  1. Add all ingredients into a cocktail shaker with ice.
  2. Shake for 15 seconds
  3. Strain into a coupe glass
