Merlot is the person knocking on the door to ask, politely, to turn the music down. It calms down the more aggressive aspects of other grapes and fills those gaps with silk pillows. That’s what is happening here. The small amount of Merlot in this wine takes the loud, bright cherry fruit of Sangiovese and turns it down a notch to express more depth and balsamic. It tames the acidity but not too much, coating the palate. This is a great wine for a cheese and meat plate, but can also hang with grilled meats.
