If you’re in the camp that regards eggnog as one of the holiday’s best beverages, now is the perfect time to try making some of your own. This version from Grant Sceney of Fairmont Pacific Rim is a labor of love, but well worth the effort.
Cinnamon, nutmeg, and vanilla infuse milk and heavy cream before coming together with eggs and sugar. For any holiday party attendees under the age of 21, this is a perfect place to stop and set some aside for them to enjoy. If you’re interested in taking things a step further, add in both Cognac and spiced rum for a luscious and tasty holiday treat.
Ingredients
2 cups whole milk
2 cups heavy cream
2 cinnamon sticks
2 freshly grated nutmegs
1 vanilla bean, split and seeds removed
6 egg yolks
⅔ cup granulated sugar
3 ounces Cognac
3 ounces spiced rum
Directions
In a saucepan, add milk, cream, spices, and vanilla and heat until boiling.
Once boiling, remove from heat and allow to steep for 30 minutes.
In a separate bowl, whisk together egg yolks and sugar.
Slowly pour spiced, heated milk into egg-sugar mixture, stirring gently. Be careful not to add too quickly or you’ll end up with scrambled eggs.
Continue slowly adding mixture until all is combined.
