The Story Behind The French Zabaglione

A modern classic first created in 2003, the Zabaglione is a cocktail with such great flavor and balance and was inspired from a traditional Italian dessert of the same name. I modified this cocktail to make it a little more like a dessert I would want at the end of a meal, and that is exactly what this delicious cocktail is best for: a liquid dessert. The banana liqueur balances beautifully with the cognac and lemon juice with the egg, giving it exceptional mouthfeel and viscosity. The final ingredient, the orange bitters, just gives it that little extra character and rounded dessert-like feature.

Ingredients

  • 1.5 ounces cognac
  • ½ ounce banana liqueur
  • 1 ounce lemon juice
  • 1 whole egg
  • 2 dashes orange bitters

Directions

  1. Combine all ingredients with a cup of ice in a cocktail shaker
  2. Shake hard to chill and emulsify ingredients
  3. Strain into a second strainer to remove ice
  4. Shake again even harder to get a perfect consistency
  5. Strain into a coupe glass or preferred vessel
  6. Garnish with a lemon peel for extra aromatics
