Hilmy Cellars Politics and Religion 2019 Review
What did I just taste? Erik Hilmy set out to make the best wine in Texas ten years ago, and based on this bottle alone he and his team are well on their way. This is such a wonderful wine. The balance is undeniable. The nose is earthy and fruit-forward. This wine is not about the aromas – which are wonderful – it's about the texture. On the palate, this wine is a could of cozy with very focused, plush fruit. The acidity is just right and lifts the chewy core. It's the kind of wine that excites your senses for another sip.
