Chateau Saint-Roch Cotes du Roussillon Villages 'Chimeres' 2016 Review

If you have never heard of this wine region you should run out and get this wine now, especially at this price point, because it is your new hero for anything grilled and it will only get better as it opens. The tannin in this wine is a force to be reckoned with but at the same time it has a good acidity not allowing the wine to be too astringent. It has a deep, broad palate and aromas of mocha swirled with hints of vanilla and strawberry that opens into blueberry and baking spices with subtle winks of game meat. Hell, buy a case and open one every fall and winter to see how it ages, cuz it's gonna.
