The Story Behind The Sparkling Strawberry Bellini

For me, summer always means fruit. There's nothing like fresh fruit to brighten up a cocktail and give it that effervescence we're all craving all summer long.

With all of the beautiful strawberries around lately, I just had to use some in a few cocktail creations over the weekend. This is my rendition of the classic Bellini, which is traditionally made with peach puree. Instead, I used fresh strawberries blended with a little sugar and lemon juice to balance the concoction. I added the puree into the bottom of the glass and then topped with some delicious Prosecco to give it a really fresh, effervescent flavor and mouthfeel. This cocktail is great for any occasion, and the puree can be made ahead of any event so it’s easy to throw the ingredients together individually at a party without any hassle.

Ingredients

  • 2 fresh strawberries
  • ¼ ounce lemon juice
  • 1 teaspoon sugar
  • 3 ounces Prosecco

Directions

  1. Blend strawberries with sugar and a touch of lemon juice
  2. Pour puree into a coupe or Champagne flute
  3. Top with Prosecco
  4. Garnish with additional strawberry
