In Patagonia, the word "wapisa" means whale. So, being the only coastal winery in this region, its namesake makes sense. Not only can whales be observed just off the coast, but this is a winery that ages their wine in the sea. Patricia Ortiz, owner of Wapisa, has these wines aged under the pressure and among the constant cellaring temperature of the sea. The result is a full and earthy Malbec with the wispy aroma of a forest in October and the welcome waft of warming spices (cinnamon, nutmeg, etc). It has a concentration of fruit that is balanced by good acidity, making for a comfortable weight on the palate. A great holiday wine.
