Yeasty notes of green apple and subtle lemon peel open the nose. There is a prominent mineral-driven quality that carries from the nose to the palate. The mouthfeel is round and salty sweet, with soft bubbles filling space with mediterranean herbs (rosemary, thyme). It's a quality sparkler you'd be happy to drink.
