Pinhook launched this limited-edition release in 2019. Made using a high-rye mash bill (20.5 percent), this bourbon spends four years in cask before it’s bottled at 49 percent ABV. The sweet piercing scent of red berries leads the nose, followed by banana and some mint. The palate has good concentration, with tropical fruit flavors joined by a hint of rye spice. This is an outlier, but an interesting one.
