Banyuls is made in a similar way to port (mutage) but with native grapes from the Roussillon region. This winemaker makes this wine from field blends of multiple varieties and ages it in carboys exposed to the sun and then in french oak, crazy right? The best part about this wine is the acidity. Sipping this wine you will experience dried fruits like apricot and caramel, which is expected with this style, but the acidity breaks it all apart and makes a sweet wine vibrant and alive.
