The Story Behind The Rosemary And Honey Daiquiri

Just because there’s snow on the ground doesn’t mean you have to opt for hot beverages during the winter months. It may come as a surprise, but Daiquiris can make the perfect winter cocktails, especially on those frigidly cold nights. Daiquiris are relatively simple to make, and can be customized to pair with the weather, and better yet, with the ingredients that you already have around your kitchen.

The classic Daiquiri has three ingredients: rum, sugar and lime. Though these are perfect to drink when it’s warm outside — especially during the summer months, when melons and other fresh fruits can be added to the mix — throughout the winter, seasonal ingredients such as rosemary and certain citrus fruits are great additions as well.

For this recipe I’ve decided to put a spin on the traditional daiquiri by adding honey syrup instead of sugar. Honey is a great substitute for sugar in cocktails, and most people already have it in their kitchens. Plus it’s similar to agave in that it brings added flavor to the cocktail. (In order to use honey in your cocktail properly, you’ll first need to make into a syrup: honey can be very viscous, so if you add it directly into your cocktail it will clump up.)

I chose to use dark rum in this cocktail, and specifically, Zacapa Rum. This particular rum’s rich honey profile with sweet notes render it the perfect candidate for this drink, and the rosemary adds an earthy note that makes it impeccably balanced.

Ingredients

  • 2 ounces of dark rum, preferably Zacapa 23
  • ½ sprig of rosemary
  • ½ ounce of honey syrup (recipe below)
  • 1 ounce of lime juice
  • ½ cup of ice

Directions

  1. Fill cocktail shaker with rum, honey syrup, lime juice, rosemary and ice.
  2. Shake mixture then strain into serving glass,

Honey Syrup Ingredients

  • 1 cup honey
  • 1 cup water

Honey Syrup Directions

  1. Mix honey and water in a saucepan and simmer until the mixture is fully combined.
  2. Remove the liquid from the heat and allow it to cool to room temperature.
