The Story Behind The Perfect Port Daiquiri
Port wine is excellent in cocktails. To match the flavor profile of light, floral white port, I made a simple syrup using Demerara sugar to use in a variation on a classic Daiquiri. The sugar adds great texture and a bolder flavor to the drink. I then mixed it up even further, adding some rosé port to elevate the citrus notes and add a touch of berry sweetness.
Ingredients
- 1 ounce white port
- 1 ounce rosé port
- 1 ounce lime juice
- ¾ ounce Demerara syrup
- 1 egg white
Directions
- Combine all ingredients in a cocktail shaker with ice.
- Shake hard to chill and combine.
- Strain out the ice.
- Shake hard again to further emulsify ingredients.
- Fine strain into a coupe or cocktail glass.
