The Story Behind The Orchard Street

Located in downtown Denver, Lady Jane cocktail bar changes up its menu every season to reflect the freshest ingredients possible. The Orchard Street — developed by Stuart Weaver and Colin Whelehan — is just one of many seasonally inspired cocktails on Lady Jane’s menu, featuring zippy citrus and crisp apple all topped with sparkling wine for a bubbly bonus.

Weaver and Whelehan also expanded the seasonal profile of the gin-based cocktail by creating their own spiced Honeycrisp apple syrup, which blends spices like cinnamon, allspice, cloves, and cardamom. The simple syrup works to sweeten the cocktail without going over the top while introducing spices that complement apple flavors for a lovely, sessionable holiday sipper.

Ingredients

  • 1 ounce The Family Jones Gin
  • 1 ½ ounces Spiced Honeycrisp Apple Syrup
  • 1 ½ ounces Chiarli “Vecchia Modena Premium” Lambrusco di Sorbara
  • ½ ounce lemon juice
  • 1 bar spoon Nux Alpina Walnut Nocino
  • Garnish: Honeycrisp apple fan

Directions

  1. Add all ingredients to a cocktail shaker with ice.
  2. Shake and fine strain into a goblet with ice.
  3. Garnish with a skewered apple fan.

Lady Jane’s Spiced Honeycrisp Apple Syrup Ingredients

  • 1 cup sugar
  • 1 cups water
  • 2 cinnamon sticks
  • 2 whole cloves
  • 2 cardamom pods
  • 1 teaspoon allspice berries

Lady Jane’s Spiced Honeycrisp Apple Syrup Directions

  1. Gently crush the spices and add to a small pot with 2 cups of water.
  2. Bring to a boil and simmer for 10 minutes.
  3. Stir in 1 cup of sugar and stir until fully dissolved.
  4. Once dissolved, remove from heat and strain to remove any solids. Allow to cool, then store in a food safe container.
  5. Once the syrup is set aside, cut Honeycrisp apples into 1.5” x 1.5” chunks, discarding the cores.
  6. Juice the apples and strain to remove any remaining solids or pulp.
  7. Combine 2 parts Honeycrisp Apple Juice and 1 part Spiced Simple Syrup for cocktail use.
