The Story Behind The El León de la Sierra

To enter the multiverse of cocktail variations, look no further than Mírate’s El León de la Sierra, a variation of the Lion’s Tail, which in itself is a variation of the Whiskey Sour. Rather than focusing solely on whiskey as the cocktail’s base, the Lion’s Tail sees the addition of allspice dram, which served as the inspiration for beverage director Max Reis’s El León de la Sierra.

Here, Reis utilizes Mexican corn whiskey and a Pueblan herbal liqueur as the cocktail’s base. The two spirits are accompanied by a tamarind liqueur that serves as a reinterpretation of the traditional Mexican holiday punch, Ponche Navideño, and brings a balance of sweet and tart.

Ingredients

  • 1 ounce Sierra Norte Black Corn Whiskey
  • ½ ounce Yolixpa Teepak
  • ½ ounce Pajarote Ponche de Tamarindo Liqueur
  • ¾ ounce lemon juice
  • ½ ounce simple syrup

Directions

  1. Add all ingredients to a shaker tin with ice and shake until cold.
  2. Strain into a sour glass.
