Pineapple Daiquri

I am all about a reason to celebrate one of my favorite spirits, rum, so when National Rum Day rolled around earlier this week, you know I had to spend the day creating new rum cocktails. I experimented a good bit, recreating some classic cocktails with variations that incorporated rum in place of the specific cocktail’s traditional spirit. In the end, the cocktail I made that I enjoyed most was the classic daiquiri. My twist is adding a bit of pineapple to the mix.  It’s a cocktail that will immediately whisk you away to the islands.

Recipe: Pineapple Daiquiri


  • 2 ounces white rum
  • ½ ounce pineapple juice
  • 1 ounce lime juice
  • ½ ounce simple syrup


Combine all ingredients into cocktail shaker and shake to chill and dilute the mixture. Strain into coupe glass.

Yield: 1 cocktail
