Strawberry Aperol Spritz Recipe

Today I am sharing a twist on one of my favorite summer cocktails of all time – the popular brunch drink Aperol Spritz. The key ingredient, Aperol is a popular Italian aperitif. It’s a bit similar to Campari, but it’s less bitter and lighter in color. I was first introduced to this cocktail on a trip to Italy, where I fell in love with everything Aperol. Locals and tourists alike drank Aperol spritzes on outside patios while basking in the Mediterranean sun. The drink, which consists of Aperol, Prosecco, and soda water, was the perfect refreshment to pair with all Italian meats and cheeses. While I love plain old Prosecco, just a splash of Aperol and soda water really brought the wine to another level.

After returning from Italy, I bought a bottle of Aperol. I started making fizzy Aperol Spritzes for my friends on a regular basis, and I can’t say they complained. They loved it and we started drinking them on a regular basis. This summery, day time cocktail is only three ingredients, and I’ve added some seasonal strawberries. The Spritz is also low proof so you can drink multiple servings without getting drunk. It’s the perfect alternative to your typical mimosa. Your guests will love the beautiful color, the light taste, and the change up from the norm!

Strawberry Aperol Spritz

Ingredients:

  • 1 Cup Ice
  • 2 Ounces Prosecco
  • 1 Ounce Aperol
  • 1 Ounce Soda water
  • 2 Strawberries, chopped

Strawberry to garnish.

Instructions:

In a shaker, dry shake (no ice) the Aperol with strawberries. Strain into a serving glass filled with the ice. Top with Prosecco and soda water. Stir, add strawberries, and enjoy your summer brunch!
