Unless you’re a high roller or work next to a plethora of bodegas, chances are you bring your lunch to work. But you probably also experience Lunch Regret from time to time. Lunch Regret is when you pack yourself a meal the night before or at the last minute the morning of, only to realize at lunchtime you’re disappointed with what you brought in your brown bag. But who has time to prepare an elaborate meal when they’re finally at the office?
Well, luckily, you don’t have to worry about that. Save time, money, and cravings with this easy lunch recipe that you can make in the convenience of your office kitchen. With ZERO lunch regret.
TO DRINK: LIME CHILLED WINE COOLER
For a boozy Mad Men style lunch.
What You’ll Need
- White wine – semi-sweet here works best
- Amaretto (or, if you prefer, a sugar cube, or two sugar packets)
- Lime, halved
- Ice
- Spoon
- Glass or mug
Instructions:
This drink is incredible easy. If you’re using sugar, put it in the bottom of the glass and flick in a tiny bit of water, which will make the sugarcube easy to muddle (crush). Use the back of the spoon to muddle the sugarcube, then pour ice over it and add the white wine. If you’re using amaretto, simply pour it in first before adding the ice and wine. Stir, squeeze in one half of the lime (keep the other set aside), and you’re done.
TO EAT: EASY AS PIE QUESADILLA
What You’ll Need
- Tortillas
- Cream cheese
- Shredded cheddar
- Sriracha
- Avocado
- Microwave
- Knife
- Microwave Safe Plate
Lay that little tortilla flat on the plate. On one half, spread the cream cheese, on the other, place the cheddar. On top of the cream-cheesed half, add a squiggly line of Srriracha. On top of the cheddar half, add a few slices of avocado.
The best way to slice an avocado is to cut a circle around the center of the skin, peel one half off, then hollow out the meat. Remember that lime half you set aside? Use it to keep the rest of your avocado fresh. Put the remaining avocado in a tupperware container and sprinkle with lime juice, then enjoy again in a few days.
Microwave the unfolded tortilla for a minute and a half on high. Not all microwaves are created equal, so if the one in your office is a beast, kept it in for a shorter amount of time.
Remove the quesadilla and fold in half. Make sure it’s cooled down (you’ll want to bite in immediately), then enjoy! Dip it in more Srriracha if you’re tempted. And sneak a sip of your wine cooler. We won’t tell your boss.
