Pearse Founder's Choice 12 Year Irish Whiskey Review
This non-chill filtered whiskey spends a minimum of 12 years maturing in bourbon casks sourced from the Pearse's sister facility in Kentucky (Town Branch Distillery). The barrel influence is prominent, but not overbearing, on the nose, accentuated by punchy, fruity aromas of cherries and waxy citrus peels. These notes carries seamlessly over to the spirit's rich and approachable palate.
