Old Elk Cognac Cask Finish Bourbon Review

Despite its 10-month Cognac cask finishing period, this expression from Old Elk isn’t overly bold, nor does it display the sweetness or obvious influence imparted by other common finishing vessels. Rather, the effects are elegant in their subtlety. The nose develops with wave after wave of perfumed sweetness, and a lightly tannic structure swoops in on the palate to keep the sweet elements at bay, resulting in a long, toasty finish. Old Elk’s high-malt (34 percent) mash bill works wonders here, too. Although it’s an admittedly pricey bottle, we highly recommend seeking this one out.
