The winemaker did something smart here and blended a little bit of Chardonnay into this wine, making it the perfect Prosecco for food; actually this needs food. It has a wonderful structure with persistent bubbles heightening the lemon curd and rich golden apple aromas. That structure is mirrored on the broad, somewhat dry palate with a slight addition of honey peeking through. It's a wine that calls for a cheese plate, a light brunch or even cacio e pepe.
