The Story Behind The Wildest Red Head

This Scotch cocktail from bartender Meaghan Dorman of the Raines Law Room at the William in New York City is a lighter take on a Whiskey Sour but just as festive for the holiday season.

Comforting with a rich body, the Wildest Red Head combines just half an ounce of blended Scotch with allspice dram, lemon juice, and honey syrup. It’s all topped off with a Cherry Heering float, which provides just the right amount of sweet-tart complexity. “We love to say this drink tastes like a hug,” Dorman says.

Ingredients

  • ½ ounce blended Scotch
  • ¼ ounce allspice dram
  • ¾ ounce lemon juice
  • ½ ounce honey syrup (3:1 honey to water)
  • ¼ ounce Cherry Heering, to float

Directions

  1. Add lemon juice, honey syrup, allspice dram, and Scotch to a shaker tin with ice and shake vigorously.
  2. Strain into a rocks glass with fresh ice.
  3. Add Cherry Heering float.
