The Story Behind The Sparkling Raspberry Royale
This cocktail is a cross between a Breakfast Martini and a Kir Royale. I used jam, lemon juice, and gin as the fruity, floral base, à la the classic Breakfast Martini, and topped it off with some Champagne, as if it were a Kir Royale.
Everything comes together deliciously. The effervescence from the Champagne accentuates the fresh scent every time you take a sip. Good-quality raspberry jam makes a difference here, as it provides the strongest flavor in the drink. The lemon juice brings balance, complementing the jam’s sweetness with a fresh citrus taste. And a potent Old Tom gin adds a little floral hit.
- 1.5 ounces gin
- 1 ounce lemon juice
- 2 bar spoons raspberry jam
- Champagne to top
- Combine jam, lemon juice, and gin in a cocktail shaker with ice.
- Shake hard to chill and emulsify.
- Finely strain into a cocktail glass of your choice
- Top with Champagne
