Yes, mezcal continues to charm bartenders and aficionados, but the popularity of tequila raises the question of whether or not the “other” agave-based spirit will ever enjoy the same limelight.

Scaling mezcal has its limitations. Producers rely on wild agave varieties — an ingredient that’s difficult to scale to larger yields. The spirit’s typical flavors can also be polarizing, curtailing its potential for mainstream popularity.
