The Story Behind The Pineapple Sunrise Sour

I am in Mexico right now, and the abundance of fresh fruit and tequila make the country great for cocktail inspiration. I became obsessed with these miniature pineapples that I found at the local market, and in Mexico there is no shortage of high quality tequila, so combining the spirit with the little pineapples made for a delicious drink.

I started with the idea of making a Tequila Sunrise and used pineapple juice instead of the traditional orange to give it a more tropical base, but then decided to add something and create a signature Beautiful Booze Cocktail. Since I love sours almost as much as I love sunrises, combining the two worked perfectly. I didn’t have access to lemons here, so I pressed some fresh lime juice and added a little egg white to give my adaptation some of that silky mouth feel that all sours should have. To sweeten this sunrise I used some maraschino cherry juice instead of using sugar syrup or grenadine. By doing so, I was able to take the classic sunrise and transforms it into a glass of topical wonder!

Ingredients

  • 1.5 ounces of tequila
  • 2 ounces of pineapple juice
  • ½ ounce of cherry juice
  • 1 egg white
  • 1 cup of ice

Directions

  1. To a shaker add tequila, pineapple juice, and egg white.
  2. Shake for 20 seconds then add ice.
  3. Shake for another 20 seconds then strain mixture into serving glass.
  4. Pour cherry juice down the side of the glass.
  5. Garnish with a Maraschino cherry.
