This episode of The Buildout is brought to you by Farmer’s Gin. Whether you are building a bar, you currently are operating a bar, or you just run a bar at home, you need to have a Martini on your menu — and that Martini deserves Farmer’s Gin. Farmer’s Gin is created by the same amazing people who created Michter’s Bourbon. Every single bar deserves a great gin, and Farmer’s Gin is perfect for creating all of the classic gin cocktails. Farmer’s Gin is made in Idaho at the first organic distillery in the United States. It’s made using Regenerative Organic Certified grain that’s grown on a family farm. The regenerative approach they use supports soil health, biodiversity, and also just creates a really delicious gin. You can learn more by following Farmer’s Gin on their socials — @FarmersGin — or heading to farmersgin.com to learn more.
When Kenta Goto left his job as a bartender at SoHo’s Pegu Club to open his own place on the Lower East Side, he was stepping into unfamiliar territory. Though he already knew the ins and outs of a great bar program, starting a business was an entirely different feat. Of course, Kenta did what came naturally to him: He studied. He read everything he could find about owning and operating a business — and it paid off. From day one, Bar Goto clicked, and it has since grown into one of the city’s most acclaimed bars.
Today on “The Buildout,” Kenta sits down with Adam to talk about taking the leap from star bartender to owner. Kenta shares everything he learned while preparing to open and what it took to cement Bar Goto as a New York drinking destination.
