Shelter Distilling Small Batch Blue Corn Bourbon Review
Shelter Distilling places a hyper-focus on ingredients and process, and produces this memorable bourbon from a California Blue Corn-dominant mash bill, using double pot still distillation and slow proofing. Demerara sweetness on the nose leads to light sponge cake aromas, with fruit arriving quietly in the form of tinned peaches. On the palate, subsequent servings of maple and vanilla make it a pastry lover’s dream.
