After spending five years aging on the lees, this Pinot Noir-dominant sparkling wine is broad, succulent, and toasty, with plenty of nutty notes and warm spice to round out red and yellow apple fruit. There’s enough acidity, along with a fine line of earth, to provide tension in this well-crafted, limited-release bottle.
