Old Elk Wheated Bourbon Review
With a mash bill containing a remarkable 45 percent wheat, this bourbon is a true outlier. The distillery also utilizes a "slow-proofing" process, which gradually brings the ABV of the final spirit down to 46 percent over a period of several weeks. According to Old Elk, this technique is used to preserve subtle notes that would otherwise be lost during proofing. The aromas prove to be mellow and supple, while the palate packs a punch with surprising intensity and grip.
