Erin McMurrough has long loved the smaller properties of Champagne. Winemakers that source from their own vineyards show their own sense of place in a bottle as opposed to the larger houses who buy from said growers. And then it came to her. Why not replicate that same sense of place in a bottle of bubbly from her estate in the Finger Lakes. A brilliant idea if we say so ourselves. This sparkling Cayuga White is a stunning example of how hybrid wines can show complexity and depth in the right hands. It has an inviting crisp apple-y nose with a whiff of white pepper. The palate is dry with a good medium weight and comfy bubbles. The wine has developed a great depth and richness from some time aging in bottle.
