Just outside of downtown Paso Robles is Tin City, an old warehouse district turned into tasting rooms and restaurants that invites you to walk around and explore the local products. It houses some of the best examples of Paso Robles wine, including Field Recordings. This winery is a celebration of diversity in grapes, sourcing uncommon varieties from unique sites across California's Central Coast. Like this grape native to the Penedès region of Spain: Xarel-lo. Though it's primarily used in the sparkling wines of Cava, more producers are testing out Xarel-lo's potential as a still wine — with impressive results. This expression from Santa Barbara has a waxy, floral nose with some sliced pear and delicate white pepper aromas. It's true to the variety with refreshing acidity, sea-salt minerality, and medium depth of fruit. A very well-made wine.
