With the word “Elevación” in its name, it might come as some surprise that this is a valley tequila. Its profile is green, herbaceous, mineral-rich, and will appeal to anyone who loves the pyrazines of a Cabernet Sauvignon, Cab Franc, or, more obscurely, Carménère. There’s a roasted agave sweetness on the palate that balances everything out and makes every sip compelling.
