Doc Swinson's Whiskey Exploratory Cask Pineau Review

Cask-finished bourbons can be a hit-or-miss experiment, but this "Experimental" expression from Doc Swinson’s Whiskey definitely lands in the former camp. For this release, the brand first aged two Indiana-sourced high-rye bourbons separately for a little over 5 years before blending the two and storing in 350-liter ex Pineau des Charantes casks for a final 9 months to 1 year. The final blend delivers one of the most harmonious and unique bourbons we came across this year, somehow highlighting its base ingredients as well as every stage of maturation. The flavors imparted by the Pineau casks particularly shine through, with notes of stone fruit, honeysuckle, French oak, and honey all making for a delightful sipping experience.
