Perhaps the most recognizable bottle on the mezcal shelf, this joven release is made using eight-year-old espadín, which is roasted for up to eight days, wild fermented, then twice distilled in wood-fired copper stills. Smoky aromas and a hint of pineapple define the nose, while the racy palate is rich in funky tropical fruit. A saline streak continues well onto the finish, providing further complexity that adds to this mezcal’s credentials as an incredible cocktail ingredient. But don’t be afraid to sip it solo.
