Champagne Chavost Blanc de Meunier NV Review
Champagne Chavost has been in existence since 1946. Though it was a typical cooperative for decades, it recently took a new direction. The new chef de caves, Fabian Daviaux, urged all of the winery's growers to convert to organic farming, and started making wine with no added sulfites, no fining or filtering, and no dosage. This wine is made with 100 percent Pinot Meunier, which is often considered third string to Pinot Noir and Chardonnay in this region. But it definitely works in this wine. It's tart and bright with a slight hint of strawberry fruit. The bubbles are assertive, but not overwhelming, showing off a softened tartness.
