The Story Behind The Bunny Slope Dropout

In the zero-proof version of the Bunny Slope Dropout, Owen Thomson includes a proprietary NA aquavit, which pairs exceptionally well with carrot juice and turmeric syrup.

Ingredients

  • 2 ounces NA aquavit*
  • 1 ounce carrot juice
  • ¾ ounce turmeric syrup**
  • ½ ounce fresh lemon juice
  • Garnish: carrot ribbon

Directions

  1. Combine all ingredients in a cocktail shaker, add ice, and shake vigorously.
  2. Strain into a chilled cocktail coupe.
  3. Garnish with carrot ribbon on a pick.

  • 1250 grams water
  • 250 grams glucose powder
  • 75 grams caraway seed
  • 10 grams coriander
  • 5 grams star anise
  • 3 grams kosher salt

  1. Combine all ingredients in a sous vide bag and seal.
  2. Cook at 190 degrees Fahrenheit for 90 minutes.
  3. Let cool completely and then strain through a fine mesh strainer.
  4. Use immediately or transfer to an airtight container and store in the refrigerator for up to 2 weeks.
Bunny Slope Dropout

**Turmeric Syrup

Ingredients

  • 3 tsp ground turmeric
  • 1 cup hot water
  • 1 cup sugar
  • ¼ tsp kosher salt

Directions

  1. Combine turmeric and water in a blender and blend on low for 15 minutes.
  2. Strain mixture through a fine mesh filter, such as a coffee filter.
  3. Rinse blender, add sugar and salt, and blend until completely dissolved.
  4. Let cool completely before using or transfer to an airtight container and store in the refrigerator for up to 2 weeks.
