The Story Behind The Mount Fuji

Though we may be more inclined to align cocktails featuring an abundance of fresh fruit with warmer weather, the winter months bring a number of delicious flavors that make for interesting additions to seasonal cocktails. Developed by Christopher Reyes at Brooklyn’s contemporary Mexican hotspot Aldama, the Mount Fuji highlights the Fuji apple, which ripens in November and December each year, just in time for the holiday season.

The cocktail features a whopping three ounces of fresh Fuji apple juice, which brings forward crisp, sweet notes that combine seamlessly with tequila reposado’s deeper notes of agave, vanilla, and oak. Pear liqueur and cane syrup add an additional layer of sweetness to the concoction, but the addition of lemon juice perfectly balances the cocktail for a zippy and bright highball sipper.

Ingredients

  • 1 ½ ounces tequila reposado
  • ½ ounce pear liqueur
  • ½ ounce fresh lemon juice
  • 3 ounces Fuji apple juice
  • 1 teaspoon cane syrup
  • Garnish: Fuji apple slices

Directions

  1. Add all ingredients to a cocktail shaker and shake.
  2. Strain into a Collins glass over ice and garnish with Fuji apple slices.
