The Story Behind The The Escape Artist

At San Francisco institution Trick Dog, owner Josh Harris takes a casual and discrete approach to including non-alcoholic cocktails on the menu, weaving them throughout and not calling direct attention to them. This highball combines NA Weissbeer with non-alcoholic amaro, a homemade syrup, and bitters, and requires an at-home sparkling water maker for carbonation.

Ingredients

  • 4 ounces non-alcoholic Weissbier (Harris uses Erdinger)
  • 1 ½ ounces The Pathfinder non-alcoholic spirit
  • ¼ ounce rich cinnamon syrup*
  • 4 dashes All the Bitter Fig & Walnut Bitters (1 dash Fee Brothers fig bitters and 1 dash Fee Brother’s black walnut bitters)
  • Garnish: skeleton leaf (optional)

Directions

  1. In the bottle of an at-home sparkling water maker, combine all drink ingredients and chill in the refrigerator for an hour.
  2. Charge mixture according to manufacturer’s instructions.
  3. Pour into a tall glass over ice.
  4. Garnish with the skeleton leaf.

*Rich Cinnamon Syrup Ingredients

  • 2 cups raw white sugar
  • 1 cup filtered water
  • 5 sticks cassia cinnamon roughly crushed

*Rich Cinnamon Syrup Directions

  1. In a small saucepan, bring all ingredients close to a boil and then remove from heat and cover.
  2. Steep mixture for at least 20 minutes then strain through a fine mesh strainer.
  3. Let cool completely before using, or transfer to an airtight container and store in the refrigerator for up to 1 month.
