The Story Behind The Scrimshaw

At Brooklyn’s Sunken Harbor Club, Chief Cocktail Officer and VinePair 2024 Next Wave Awards Bartender of the Year Garret Richard features non-alcoholic cocktails in the menu’s cheekily named “On Dry Land” section. Scrimshaw, a zero-proof alternative to amaro, utilizes The Pathfinder non-alcoholic spirit, as well as grapefruit juice that’s been clarified and acidified, and an elderflower syrup from Austrian biodynamic wine producer Nikolaihof.

Ingredients

  • 2 ounces The Pathfinder non-alcoholic spirit
  • ⅝ ounce clarified and acidified grapefruit juice*
  • ¼ ounce Nikolaihof Elderflower Syrup
  • 5 drops saline solution (5:1 ratio of salt to water, by weight)
  • Garnish: grapefruit peel

Directions

  1. In an Old Fashioned glass, combine all drink ingredients and stir gently.
  2. Garnish with grapefruit peel.

  • 100 milliliters clarified grapefruit juice
  • 4 grams citric acid powder
