After falling in love with home brewing after college, Jared Himstedt found himself tasting through some single malt Scotches one day with a friend when he experienced an aha moment. He cast his beer business aspirations to the side, and dove head first into the wild world of American whiskey. Himstedt acquired a distilling permit, put one foot in front of the other, and soon realized that he had walked quite a distance. Now, he’s the head distiller of Waco, Texas’s Balcones Distilling where he and one of his old homebrewing buddies are pushing the boundaries of the American single malt category.
