Totus Tuus Cava Brut Reserva NV Review

Cava is always made in the traditional method (i.e., the same techniques used to make Champagne), but is usually a fraction of Champagne's price; when you find a Cava made in your preferred style, you'll feel like you've discovered an amazing secret. Totus Tuus is only $14, but has qualities you'd associate with a full-bodied Champagne. The color is medium golden, and aromas include ripe peaches, fresh baked bread, and a hint of autumn leaves. The texture is very full-bodied, with a richness that comes from spending 20 months on the lees in bottle before disgorgement and release. The mousse is soft and persistent, and the finish is very long and creamy. While not quite as complex as a proper Champagne, it's still very nuanced and pleasing - and is an incredible bargain at $14. If you're looking for a robust bubbly that tastes like it should be more expensive, you should pop open this bottle.
