Whispers of strawberries and cream come at you first. As the bubbles settle in, wafts of sliced apples hit your brain. The palate is angular and more focused on minerals than fruit, but as it opens and comes to room temperature, it fattens up a bit. If there was a Champagne for oysters and caviar on homemade potato chips, this is it.
