The Story Behind The Parisian Night Suit

If you’re someone who holds onto spritz season with a white-knuckle grip but loves the holidays just as much, the Parisian Night Suit is a cocktail you’ll want to try. Developed by Ali Martin of NYC’s The Up & Up, its herbal gin base gets a nutty holiday twist with the addition of amaretto. The mix of almond and botanicals provides the perfect platform for a juicy pear and tart cherry syrup, sweetening the cocktail without pushing it into the cloying territory.

Despite the amaretto and fruit syrup, the cocktail remains light-bodied and refreshing. Lime and grapefruit juices offer just enough acid and bitterness to balance everything out. Just don’t forget to top it off with a good glug of sparkling wine — after all, what’s the holiday season without bubbles?

Ingredients

  • ¾ ounce gin
  • ¼ ounce amaretto
  • ¾ ounce Pear-Tart Cherry Syrup*
  • ¼ ounce lime juice
  • ¼ ounce grapefruit juice
  • 2 dashes Saline Solution**
  • Sparkling wine
  • Garnish: lime oil

Directions

  1. Add spirits, fruit syrup, citrus juices, and saline solution to a shaker with 2 small ice cubes and whip shake.
  2. Strain into a double rocks glass filled with pebble ice.
  3. Top with sparkling wine.
  4. Pack with more pebble ice and top with 4 dashes of lime oil before serving.

  • ½ cup tart cherry juice
  • 1 cup pear juice
  • 1 ½ cup white sugar

  1. Heat all ingredients in a pan over medium heat.
  2. Bring to a boil and stir until dissolved.
  3. Allow to cool and store in an airtight container.

  • 4 cups water

  1. Add salt and water to an airtight container and stir until dissolved.
  2. Seal and store in the refrigerator.
