The Story Behind The Belltown Goddxssxs

Created by Jojo Kitchen, bar manager at Seattle’s Rob Roy, the Belltown Goddxssxs is a nod to Seattle’s nickname as well as a gender-expansive permutation of the word “goddess.” Served in a Collins glass, the highball combines non-alcoholic amaro with a proprietary cantaloupe shrub, saffron-rose syrup, and citrus.

Ingredients

  • 4 ounces chilled soda water
  • 1 ½ ounces fresh lemon juice
  • 1 ounce The Pathfinder non-alcoholic spirit
  • 1 ounce cantaloupe shrub*
  • ¾ saffron sharbat**
  • Garnish: mint leaves

Directions

  1. In a Collins glass, combine all ingredients with ice and stir gently to combine.
  2. Garnish with mint.

*Cantaloupe Shrub Ingredients

  • 100 grams chopped cantaloupe
  • 100 grams granulated sugar
  • 50 milliliters white wine vinegar

*Cantaloupe Shrub Directions

  1. In an airtight container, combine cantaloupe and sugar to macerate, and place in the refrigerator for 24 hours.
  2. Add vinegar and stir to dissolve.
  3. Strain through a fine mesh strainer.
  4. Use immediately or transfer to an airtight container and store in the refrigerator for up to 1 week.
Belltown Goddxssxs

**Saffron Sharbat

Ingredients

  • 600 grams granulated sugar
  • 480 grams water
  • 3 ounces rose water
  • 1 tbsp hot water
  • ½ tsp saffron threads

Directions

  1. In a small, heat-proof vessel combine saffron and hot water and steep for 20 minutes.
  2. In a medium pot, bring water to 170 Fahrenheit and add sugar, stirring to combine.
  3. Add rose water and saffron-water mixture.
  4. Simmer for 20 minutes and then remove heat and allow to cool completely before using.
  5. Transfer to an airtight container and store in the refrigerator for up to 1 week.
