Bartenders, you know fruit forms the heart of so many great cocktails — but keeping it fresh and consistent year-round? That’s a challenge — but not when you have Les vergers Boiron on hand. For decades, they’ve been the gold standard in the culinary and pastry worlds — in fact, back when I was a chef we used them all the time in sorbets, sauces, and mousses. And you have to check out Boiron’s line of fruit purees crafted specifically for beverages: Ambient purees. We’re talking real fruit, no added sugar, no artificial colors — and they’re totally shelf-stable. No Prep, Just Pour! And the lineup is exactly what you want behind the bar: blood orange, mango, passion fruit, pineapple, raspberry, strawberry, and white peach. Always consistent, always high quality, always ready when you are. With Les vergers Boiron, every pour is packed with flavor, so your cocktails taste as good as they look. We like to stick to rules and definitions here on the “Cocktail College” podcast. It’s an educational space, after all. According to the standard rules of mixing cocktails, in order to do so, one must combine spirit, bitters, sugar, and water. These rules can be melded, but can a cocktail really be made from just one ingredient? The Amaro Shakerato says yes.
By shaking just one ingredient properly, the Amaro Shakerato fires on all cylinders of cocktail creation: There’s booze, bitters from the botanicals, amaro’s key sugar component, and water in the form of dilution. But while it seems like a one-size-fits-all formula, the Shakerato is anything but a simple drink.
Today on the “Cocktail College” podcast, Tim McKirdy is joined by Robby Dow of Wilmington, N.C.’s Bespoke. The two explore how amari check every classic cocktail box, and why shaking different expressions side by side can lead to wildly different — and delicious — results. Tune in for more.
