We all love Prosecco (even thieves, apparently), but some hot summer days call for something bubbly that packs a bit more punch. Enter our new go-to recipe, the Mint Cucumber Prosecco Sparkler. Combine Prosecco, vodka, mint, cucumber and lime for an easy-to-make, refreshing summer cocktail that will help you wind down after a long day in the heat.
- 3 ounces Prosecco
- 1.5 ounces vodka
- 1-inch slice of cucumber, chopped
- 1/2 ounce fresh lime juice
- 2 ounces simple syrup
Muddle together chopped cucumber and lime juice in a cocktail shaker. Add vodka, simple syrup, and ice. Shake well. Strain into a rocks glass filled with ice. Top with Prosecco. Garnish with a cucumber slice and a mint sprig or two. Enjoy!
