The Story Behind The Sec Back Your Clock-Tail

Chronically tired people everywhere, rejoice! It’s the best weekend of the year. This Sunday at 2 a.m, we “fall back” in time and gain one glorious hour of sleep -- or, if you’re like us, one more precious hour of cocktail slugging on Saturday night. We love a good themed cocktail; with Halloween just passed and Thanksgiving on the horizon, we can’t stop thinking about festive, seasonally appropriate beverages. In honor of daylight saving time this weekend, we’re celebrating our extra hour of “thyme” with this herb-infused, Sec Back your Clock-tail, perfect for all of your daylight-saving festivities. What better way to celebrate sec-ing back your clock and gaining thyme than with a delicious, herb-infused clock-tail? Yup, we just went there.

Ingredients

  • 2 oz Vouvray Sec
  • 1 oz gin
  • ½ oz lemon juice
  • 2 dashes of thyme-infused simple syrup

Directions

  1. Combine gin, thyme-infused syrup and lemon juice in a shaker filled with ice. Shake and strain into Champagne flute. Top with Vouvray sec and stir gently.

Thyme Infused Simple Syrup Ingredients

  • 2 cups water
  • 1 cup sugar
  • 3 tablespoons thyme

Thyme Infused Simple Syrup Directions

  1. To make thyme-infused simple syrup combine all three ingredients in hot saucepan and bring to a light simmer. Let simmer for 4 minutes, then remove from heat and let the ingredients infuse for another 10 minutes. Strain liquid from leftover solids.
